Introduction

“Tea Record”, a treatise on tea drinking in ancient China. A total of one volume, one for two volumes. Cai Xiang (1012-1067) of the Northern Song Dynasty was written in the reign of Emperor You of the Northern Song Dynasty (1049-1053), and is an important monograph on tea science in the Song Dynasty. The book is divided into two parts. “Tea Record” is Cai Xiang’s work that recommended Beiyuan tribute tea to the emperor because of Lu Yu’s “Tea Classic” “not the first product in Jian’an”. There are two chapters in total. The first chapter discusses the ten items of tea, including color, aroma, taste, Tibetan tea, roasted tea, milled tea, Luo tea, Hou tea, boiled cup, and ordered tea. It mainly discusses the quality of tea soup and the method of cooking and drinking. The next part discusses utensils, which are divided into nine types: tea baking, tea cage, anvil, tea bell, tea mill, tea Luo, tea cup, teaspoon, and soup bottle. It is the most influential monograph on tea after Lu Yu’s “The Classic of Tea”. Cai Xiang (1012~1067), born in Xianyou (Fujian), Xinghua, Northern Song Dynasty. Zi Junmo, a famous expert in tea identification in the Northern Song Dynasty. During the reign of Emperor Renzong of Song Dynasty (1041-1048), he served as a transshipment envoy in Fujian and was in charge of supervising the production of Beiyuan tribute tea. He created Xiaotuan tea, which is famous all over the world.
